Papardelle con funghi e salsiccia


  • 1 lb Fresh Homemade Pappardelle
  • 1 lb Mushrooms
  • 1 lb Sweet or Hot Italian Sausage
  • 1/2 cup Cherry or Grape Tomatoes
  • 1/3 cup Extra Virgin Olive Oil
  • 2 cloves Garlic
  • to taste Salt & Pepper
  • to taste Grated Parmigiano cheese

 Prepare the pappardelle as you would any other homemade pasta. Sautee in a large skillet and in the extra virgin olive oil the chopped garlic till golden, you could add some hot pepper if you like this dish to be hot. Cut the Italian sausage in cubes, after you remove the skin, and brown it in the oil. Add the mushrooms, grossly chopped and let them cook for a few minutes. Add the tomatoes cut in half and let everything cook till the tomatoes are done. You may want to add some water if needed. Add salt and pepper to taste. Add the pappardelle cooked “al dente” and serve hot with some parmigiano
