Fagiolata in "Piazza"


  • 3 Tbsp Extra Virgin Olive Oil
  • 1 Clove Chopped Garlic
  • 4 oz Hot Italian Sausage, cut in medallions of 1/4 of an inch
  • 1 dozen Cherry or Grape tomatoes cut in half
  • to taste Black Pepper and Salt
  • 8-9 oz Cannelini Beans
  • 5 - 6 leaves Fresh Basil

In a, medium size, hot sauté pan put the extra virgin olive oil (enough to cover the bottom), the hot Italian sausage, cut in ¼ inch medallions. Let it brown on one side and then the other side.

Add the grossly chopped garlic and, when it reaches a golden color, add the fresh basil and subsequently the tomatoes.

Let it cook for 3-4 minutes and then add the cannellini beans with some of their own juice.

Add salt and pepper to taste and let it cook for 5-6 minutes on medium-hot heat. Serve hot with good, fresh baked, Italian bread.
